Hummus - Recipe 1

  • 1/4 cup tahini (sesame seed paste) or peanut butter
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 2 large cloves garlic
  • 2 t fresh lemon juice
  • 1/4 cup hot water
  • 1 can chickpeas drained, rinsed
  • chopped fresh coriander or parsley

 Combine tahini, cumin, salt, garlic in small bowl. 
Stir in lemon juice and water. 
Puree chickpeas, add tahini mixture and process well. 
Season with more cumin and salt. 
Sprinkle with parsley. 
Makes 11/2 cups.

Hummus - Recipe 2

  • 1 can (540ml) chick peas drained and rinsed
  • 1/4 cup drained oil-packed sun dried tomatoes
  • 1/4 cup water
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp hot pepper sauce
  • 2 cloves garlic, minced

Puree chickpeas until coarse. 
Add tomatoes, water, lemon juice, olive oil, cumin, salt, and hot pepper sauce
Process until smooth.
