Maxine’s Tomato Soup

  • 10 ripe tomatoes, chopped

  • 3 tbsp butter

  • 1.5 tbsp olive oil

  • 3 medium onions, chopped

  • 5 tbsp flour

  • 6 cups chicken soup stock (low sodium)

  • 2 tsp Marjoram

  • 2 tsp Salt

  • 1 tsp Pepper

Melt butter and oil and sweat the onions until transparent.
Add flour and mix. Cook for 1 minute.
Add the tomatoes, stirring constantly to prevent burning.
Add the chicken soup stock and spices and simmer with occasional stirring for 10 minutes.
