Baba's Borscht

  • 3 bullion cubes (chicken or beef)

  • OR 1 lb spare ribs, or stewing chicken

  • 3-4 cups beets - shredded

  • 1 cup each carrots - shredded, beans, peas, and potatoes - cubed

  • 1 cup celery - chopped

  • 1 tbsp margarine

  • shredded cabbage

  • 1 lg onion

  • 1 - 28oz can tomatoes

  • 2 tsp sugar

  • Dill, salt & pepper to taste

Dissolve bouillon cubes in 8 cups water, or make broth by boiling ribs until tender
Add beets, celery, carrots, potatoes and gently boil for hour
Fry cabbage and onion in margarine, and add to soup with beans and peas, Boil hour
Add tomatoes and simmer for 15 minutes
Add dill & spices

When served, add dollop of sour cream if you wish. Serve with Baba's rye bread and you'll think you've died and gone to heaven!
