Baba's Borscht

  • 3 bullion cubes (chicken or beef)

  • OR 1½ lb spare ribs, or stewing chicken

  • 3-4 cups beets - shredded

  • 1 cup each carrots - shredded, beans, peas, and potatoes - cubed

  • 1 cup celery - chopped

  • 1 tbsp margarine

  • ½ shredded cabbage

  • 1 lg onion

  • 1 - 28oz can tomatoes

  • 2 tsp sugar

  • Dill, salt & pepper to taste

Dissolve bouillon cubes in 8 cups water, or make broth by boiling ribs until tender
Add beets, celery, carrots, potatoes and gently boil for ½ hour
Fry cabbage and onion in margarine, and add to soup with beans and peas, Boil ½ hour
Add tomatoes and simmer for 15 minutes
Add dill & spices

When served, add dollop of sour cream if you wish. Serve with Baba's rye bread and you'll think you've died and gone to heaven!
