BBQ Brisket

  • 2½ cups ketchup

  • ¾ cup brown sugar

  • 1½ cups chilli sauce

  • 1½ cups vinegar

  • ¾ cup water

  • 2 minced garlic cloves

  • dash Tabasco sauce

  • ¾ cup lemon juice

  • ¾ can beer

  • ½ cup prepared mustard

  • 1 tbsp celery seed

  • 4 tbsp Worcestershire sauce

  • 2 tbsp Soya sauce

  • pepper to taste

Make holes in brisket using fork
Combine above ingredients to make marinade
Marinate overnight, turning several times
Place brisket on hot grill to sear and brown fat
Remove from grill and place in foil pan
Cover tightly with foil, close hood and cook over lower heat for about 4 hours
Slice thinly across grain
Heat remaining sauce, pour over slices and serve
