Chicken Cacciatore

  • 4-5 pieces boneless chicken breast

  • 2 cloves minced garlic

  • 2 - 5½ oz cans tomato paste

  • 1 lg can tomatoes

  • 2 tbsp olive oil

  • 2 bay leaves

  • ½ tsp each oregano, salt, basil, and pepper

  • 1 med sliced onion

  • 3 lg carrots, sliced

  • 1 can sliced mushrooms (or fresh)

Skin and slice chicken into chunks, season with salt and pepper
Fry with onion and garlic until brown
Add tomato paste and 8 oz water and cook for a few minutes
Add canned tomatoes, bay leaf, oregano, basil, salt and pepper
Cook for 2 hours on medium low heat
Add carrots and cook until tender
Green peppers are optional
Serve with noodles or spaghetti
