Chocolate Cheese Muffins

  • 8 oz cream cheese

  • 1 egg

  • 1/3 cup sugar and 1 cup sugar

  • 1 cup semi-sweet chocolate chips

  • 3 cups flour

  • 1 tsp salt

  • 2 tsp each baking soda and vanilla

  • 2 tbsp vinegar

  • 2 cups water

  • ½ Quick or cocoa

Cream the cheese with the egg and 1/3 cup of sugar
Fold in the chocolate chips and set aside
Mix in a large bowl the flour, remaining sugar, salt, making powder and ½ cup of Quick (or cocoa)
Mix in vanilla, vinegar and water to make a runny batter
Pour into muffin tin or paper cups and place a spoon of creamed cheese mixture into center of each cup
Bake at 350F for 20-25 minutes
