Irish Soda Bread
- 2 oz Currants
- 1.50 oz Irish whiskey
- 12 oz All purpose flour, sifted
- 1 tsp Salt
- 1.50 tsp Baking powder
- 1 tsp Baking soda
- 1 tbsp Brown sugar
- 16 oz Low fat buttermilk
Soak the currants in the whiskey until plump, at least 1 hour
Sift the dry ingredients together.
Stir in the currants and whiskey
Stir in buttermilk, making a stiff batter
Spread the batter in a greased&floured 8-inch round pan
Bake at 350 0 or until brown, approximately 45 minutes |
