Irish Soda Bread

  • 2 oz Currants
  • 1.50 oz Irish whiskey
  • 12 oz All purpose flour, sifted
  • 1 tsp Salt
  • 1.50 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tbsp Brown sugar
  • 16 oz Low fat buttermilk

Soak the currants in the whiskey until plump, at least 1 hour 
Sift the dry ingredients together. 
Stir in the currants and whiskey 
Stir in buttermilk, making a stiff batter 
Spread the batter in a greased&floured 8-inch round pan 
Bake at 350 0 or until brown, approximately 45 minutes
