Lemon Sponge Pie

  • 1 cup sugar

  • 2 tbsp (heaping) flour

  • butter - about the size of a small egg

  • 2 beaten egg yolks

  • juice and rind of two lemons

  • 1 cup milk

  • whites of two eggs

Mix, in order, the first 6 ingredients
Beat the egg whites with a little sugar in a mixer
Fold into the bowl of ingredients
Pour into frozen pie crust and bake at 350F for 1 hour
