Pampushke

  • 1 tsp sugar

  • ½ cup warm water

  • 1 pkg yeast

  • 1½ cups milk

  • ½ cup butter

  • 3 eggs

  • 1 tsp vanilla

  • ½ tsp salt

  • 5 - 5½ cups flour

Poppy seed filling

  • ½ lb poppy seed

  • 5 tbsp honey

  • 2 tbsp sugar

  • ½ lemon

Mix water and sugar in bowl
Sprinkle yeast over and let stand 10 minutes
Scald milk, add butter and stir
Beat eggs, sugar and vanilla and combine with milk, cooling until lukewarm
Add yeast, salt and flour and beat until smooth
Let rise until double in volume, dough should be very soft
Dust hands with flour
Cut a ball the size of a quarter, flatten and put poppy seed mixture in the middle
Press edges together, set aside to rise until light, about 10 minutes
Fry in deep fat until golden brown. Dust with icing sugar
