Pineapple-Carrot Cake

  • 3 cups cake flour

  • 2 cups sugar

  • 2 tsp cinnamon

  • 1 tsp each salt and baking soda

  • 1 tsp baking powder

  • 1 - 8oz can crushed pineapple

  • 3 beaten eggs

  • 1 cups each oil and nuts

  • 2 tsp vanilla

  • 2 cups grated carrots

Mix all dry ingredients
Add syrup with eggs and oil to dry mixture and mix well
Drain pineapple well and mix in with carrots and vanilla
Place mixture in greased cake pan
Bake in 325F oven 45-50 minutes
Can be frosted if desired
