Shrimp Mousse

  • 1 pkg Gelatin (unflavoured)

  • 1 cup water (divided)

  • 2 tbsp lemon juice

  • 1 tbsp finely chopped onion

  • 2 tsp dill

  • dash Tabasco and pinch of salt

  • 10 oz freshly cooked shrimp

  • cup mayonnaise

  • 4 tbsp finely chopped celery

  • 4 tbsp finely chopped pimento-stuffed olives

  • cup whipped cream

Sprinkle gelatin over half cup of cold water in medium bowl and let stand until softened
Pour on half cup of boiling water and stir until gelatin dissolves
Add lemon juice, onion, dill, Tabasco, salt and stir
Chill for 15 minutes
Chop shrimp, add mayonnaise and stir into gelatin
Add olives and celery , fold in whipped cream
Put into mould, chill three to four hours
Serve with crackers or French bread
