Strawberry Cream Cheese Pie

Crust

  • 1 1/3 cups graham cracker crumbs

  • cup (packed) brown sugar

  • 6 tbsp melted margarine

Filling and topping

  • 2 pkg cream cheese (room temperature)

  • 2/3 cups sugar

  • 4 med eggs

  • 2 tsp grated orange rind

  • cup orange juice

  • 2 cups fresh strawberries

Orange Glaze

  • cup orange juice

  • 2 tbsp water

  • 2 tsp each cornstarch and sugar

Prepare crust by mixing crumbs, brown sugar and margarine
Press on bottom of 9X9" pie plate
Build up rim at edge and set aside
For filling beat cream cheese and sugar in a large bowl until smooth and fluffy
Add eggs one at a time and beat in
Stir in orange rind and juice
Turn into the prepared crust
Bake at 350F for 35-40 minutes, Cool then chill
Half or slice strawberries
Arrange on top of pie beginning by placing along the edge and continuing to the centre of the pie
Make glaze by combining ingredients in small saucepan and cook over medium heat until mixture comes to a boil
Boil one minute
Cool slightly and then spoon over pie at least two hours before serving
Makes 6 or 8 servings
