Baba's Borscht

3 bullion cubes (chicken or beef)

OR 1½ lb spare ribs, or stewing chicken

3-4 cups beets - shredded

1 cup each carrots - shredded, beans, peas, and potatoes -
cubed

1 cup celery - chopped

1 tbsp margarine
-
½ shredded cabbage
-
1 lg onion
-
1 - 28oz can tomatoes

2 tsp sugar

Dill, salt & pepper to taste
Dissolve bouillon cubes in 8 cups water, or make broth by
boiling ribs until tender
Add beets, celery, carrots, potatoes and gently boil for ½ hour
Fry cabbage and onion in margarine, and add to soup with beans and peas, Boil ½
hour
Add tomatoes and simmer for 15 minutes
Add dill & spices
When served, add dollop of sour cream if you wish. Serve with
Baba's rye bread and you'll think you've died and gone to heaven!
