East-West Broiled Cornish Hens

  • 3 rock Cornish game hens

  • ½ cup Soya sauce

  • 1½ cups water

  • 2 green onions, chopped

  • ¼ tsp cayenne powder

  • 3 tbsp cooking sherry

  • fine egg noodles

Cut the hens in half, place skin side down in a shallow broiling pan without a rack
Combine Soya, water, onions, cayenne and sherry
Pour over hens and marinate 2 hours
Broil hens, 4 inches from heat, turning often and basting for 40 minutes, or until hens are rich brown
Serve hens on bed of cooked noodles with marinade on the side
