Manitoba Blueberry Pie

  • 4 cups blueberries

  • 1 cup sugar

  • 3 tbsp cornstarch

  • 1/8 tsp salt

  • 1 cup water

  • 1 tbsp butter

  • 1 cup whipping cream

  • 3 tbsp icing sugar

  • ¼ tsp almond extract

Place 1 cup fresh berries in saucepan
Add sugar, cornstarch, salt and water, and stir constantly until thick and smooth
Remove from heat and add butter and add remaining berries
Spoon into a baked pie shell (graham wafer crust is especially scrumptious) 
Top with whipping cream to which almond extract has been added (Frangellico can be substituted for extra richness)
This sure makes some nice dessert
