Rhubarb Pie

  • 2 cups rhubarb (½" pieces)

  • 1 cup sugar

  • 3 eggs (separated)

  • 1 tbsp flour

  • 1 tbsp butter

  • ½ cup milk

Beat egg yolks
Beat in sugar, flour, and butter
Stir in milk and add rhubarb
Beat egg whites until stiff, and fold into rhubarb mixture
Pour into unbaked pie shell
Bake at 400F for 15 minutes
Reduce heat to 325F and bake until custard is set
